These tantalizing little bites of caramelized pork are a real crowd-pleaser and will disappear fast.

Caramelized Carnitas Tidbits

1 1/2 pounds boneless pork shoulder
1 tablespoon vegetable oil
2 tablespoons brown sugar, firmly packed
2 cloves garlic, finely chopped
1 tablespoon molasses
1 tablespoon lime juice
1 teaspoon kosher or sea salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon freshly ground black pepper, or to taste
1/3 cup water
2 medium green onions, thinly sliced for garnish
  1. Cut pork into 1-inch cubes. Over medium heat, heat the oil in a large skillet and brown the cubed pork, stirring occasionally, about 5 minutes.
  2. Add the remaining ingredients, except the green onions. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until the liquid has evaporated and the pork is slightly caramelized, about 35 minutes.
  3. Transfer onto a serving platter and sprinkle with green onion. Serve with wooden picks.

Makes 10 to 12 appetizer servings.
