French-fried brie appetizers,
crispy on the outside, soft and silky on the inside. Serve with
apples slices.

Fried Brie
- Oil for deep frying
1/2 cup milk
1 large egg
Salt and freshly ground pepper to taste
12 wedges (1 ounce each) Wisconsin Brie, firm, cold and rind
removed
3 cups buttery cracker crumbs
Apple slices for accompaniment
- Pour oil in large saucepan
to depth of 2 inches. Heat to 350°F (175°C).
- Beat together milk, egg,
salt and pepper.
- Dip each Brie wedge into
egg mixture, then coat thoroughly with crumbs. Repeat once. (Wedges
can be refrigerated for several hours at this point.)
- Fry a few wedges at a
time in hot oil, until crisp and golden on both sides.
- Serve immediately with
apple slices.
