Frosted Crispy Peanut Butter Bars.

With a little adult supervision, young chefs can stir up a batch of these crispy peanutty bars with a super easy-to-make butterscotch and chocolate frosting.

Frosted Crispy Peanut Butter Bars

1 cup granulated sugar
1 cup light corn syrup
1 1/2 cups* smooth peanut butter (for crunchy-style increase to 1 3/4 cups**)
2 teaspoons vanilla extract
6 cups crisp rice cereal
1 cup butterscotch or peanut butter flavored chips
1 cup semisweet chocolate chips
  1. Butter a 13 x 9 x 2-inch baking dish; set aside.
  2. In a Dutch oven or large saucepan combine sugar and syrup and bring to a rolling boil.
  3. Remove from heat and add peanut butter and vanilla, mixing well. Stir in the rice cereal; mix well.
  4. Press mixture into prepared pan (see Cook's Tip below).
  5. Melt the butterscotch (or peanut butter) chips and chocolate chips together in a glass measure on HIGH in microwave for 1 to 1 1/2 minutes, stirring mixture after the first minute (be careful not to scorch as the chips will retain their shape even though they are melted--until they are stirred); spread evenly over bars. Cool before cutting into squares.

Makes 24 servings.

*Approximately 10 1/2 ounces.

***Approximately 12 ounces.

Cook's Tip: Place a sheet of plastic wrap or waxed paper over the top to help spread and press evenly without the mess.
