Sirloin steaks prepared
with a dry spice sugar mixture and grilled to perfection with
a deviled glaze.
Barbecued
Deviled Beef Steaks
- 4 (8-ounce) sirloin steaks,
cut about 1 to 1 1/2-inches thick
- 2 teaspoons mustard powder
- 1/4 teaspoon ground allspice
- 1/2 teaspoon freshly ground
black pepper
- 1/2 teaspoon salt
- 5 tablespoons packed brown
sugar
- 2 tablespoons ketchup
- 2 tablespoons Worcestershire
sauce
- 1 tablespoon prepared
mustard
- 1/2 teaspoon Tabasco sauce
- 2 tablespoons white wine
vinegar
- 1 teaspoon paprika
- Mix the mustard powder,
ground allspice, black pepper, salt, and 1 tablespoon of brown sugar together in a small
bowl.
- In another bowl, mix the
remaining sugar with the rest of the ingredients into a smooth paste for the deviled
glaze.
- Rub the dry spiced sugar
mixture on both sides of the steaks and set them aside for at least 45 minutes, or until
you are ready to cook.
- Brush the steaks with
some of the deviled glaze and barbecue over medium-hot coals for about eight minutes for medium-rare
steak, turning and
basting them with more of the deviled mixture now and
then.
