Treat yourself to a quick, weeknight dinner with this flavorful Russian-style dish. Eye of round is one of the leanest cuts of beef available. Served here with a yogurt-based cream sauce for a lighter than usual stroganoff.

Beef Stroganoff Light

1 pound beef eye of round steak
2/3 cup water
1 (4-ounce) can sliced mushrooms, drained
1 package dry onion soup mix
1 cup plain yogurt
2 tablespoons all-purpose flour
8 ounces wide egg noodles, prepared according to package directions
  1. Prepare noodles according to package directions; drain.
  2. Meanwhile, slice round steak into 1/4-inch thick strips. Heat a large skillet over medium-high heat, spray with vegetable cooking spray and brown steak. Add water, mushrooms and onion soup mix. Bring to a boil, cover, reduce heat and simmer for 15 minutes.
  3. In a small bowl, combine yogurt and flour. Add to the meat mixture. Cook until thickened; stirring frequently. Serve hot over cooked noodles.

Makes 4 servings.
