This recipe for

Coffee Flote (Float)
- 400 ml chilled water (1 5/8 cups
or 13 1/3-ounces)
- 3 tablespoons granulated sugar
- Juice of 1/2 lemon (1 tablespoon)
- 1 teaspoon instant coffee powder
- 1/4 teaspoon salt
- 1 1/2 teaspoons Eno fruit salt*
- Mix everything, except Eno fruit salt,
and pour into two tall glasses.
- Add two ice cubes per glass.
- Just before serving add 3/4 teaspoon Eno
fruit salt into each glass. Stir lightly until frothy. Serve
at once.
Makes 2 servings.
*Available in most heath food stores. Usually
contains citric acid and/or tartaric acid, sodium bicarbonate
and (di)sodium carbonate.
