Amazing, indeed! Two ingredients,
self-rising flour and any flavor of softened ice cream, in equal
proportions are mixed together and baked for amazingly easy muffins
that are amazingly tasty...uh, did I mention they're amazing?

Two-Step Muffins
- 2 cups self rising flour
*
- 2 cups ice cream (any
flavor), softened**
- Preheat oven to 400°F (205°C).
- Mix the flour and ice
cream together until just blended. Spoon into muffin tins (3/4 full each cup) that
have been greased.
- Bake for 15 to 20 minutes,
or until golden brown.
Makes 12 muffins.
*Or you may substitute with 2 cups
all purpose flour, 2 teaspoons baking
powder and 1 teaspoon salt.
**Soften in your microwave.
Note: For variety try adding
1/2 cup nuts, mini-semisweet chocolate chips, currants, shredded coconut or whatever
you desire. Use an ingredient
that compliments the flavor of ice cream you use.
