Banana coconut muffins with a hint of cinnamon.
Banana Coconut Muffins
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg, beaten
- 1/3 cup vegetable oil
- 1 cup mashed bananas
- 1 teaspoon vanilla extract
- 3/4 cup shredded coconut
- Heat oven to 375°F (190°C).
Grease and flour a 12-cup muffin tin or line with paper liners.
- Combine flour, sugar, baking powder, cinnamon
and salt in a medium bowl; make a well in the center.
- In another bowl, mix buttermilk, egg,
vegetable oil, bananas, vanilla and coconut in small bowl. Pour
mixture into well. Mix batter until just moistened; do not over
mix.
- Fill prepared muffin tins three-fourths
full. Bake for 18 to 20 minutes or until muffins test done. Cool
in pan on wire rack.
Makes 1 dozen muffins.
