Banana adds flavor and
moisture to these cinnamon-spiced bran muffins.

Bran Muffins
- 1 cup bran flake cereal
1 cup banana, mashed (about 3 medium)
2/3 cup milk
1/4 cup packed brown sugar
1/4 cup vegetable oil
1 large egg
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
- Grease a 12-count muffin
tin; set aside.
- In a large bowl, combine
bran, mashed bananas, and milk , stirring well; let stand for
5 minutes. Add brown sugar, oil, and egg; mix well.
- In another bowl, combine
flour, baking powder, cinnamon, and salt. Stir into the bran
mixture until just combined. Distribute batter evenly into prepared
muffin tin (cups will be full).
- Bake at 375°F
(190°C) for 20 to 25 minutes.
Makes 1 dozen muffins.
