
These hearty, good-for-you, oat bran banana
muffins with raisins are perfect for breakfast or snack-time.
Bran Banana Muffins
- 3/4 cup bran
- 1/2 cup oat bran
- 3/4 cup buttermilk
- 1/3 cup canola oil
- 3 ripe mashed bananas (about 1 cup)
- 4 large egg whites
- 1/2 cup raisins
- 1 cup sifted all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- In large bowl, mix together bran, oat
bran and buttermilk. Add oil, bananas, egg whites, and raisins.
- Sift together flour, baking powder, baking
soda, and salt and add to batter. Carefully stir just until flour
mixture is incorporated. Batter will be lumpy.
- Fill 18 paper lined muffin cups about
2/3 full.
- Bake in 400°F (205°C) oven
for 20 to 25 minutes.
