A yeast-risen cracked wheat bread.

Cracked Wheat Bread

1/2 cup warm water
3 tablespoons molasses
2 (1/4-ounce) packages active dry yeast or 4 1/2 teaspoons active dry yeast
1 cup warm water
1/2 cup honey
1 cup butter, melted
1 cup milk
4 cups whole wheat flour
1 teaspoon salt
1 cup bulgur
  1. In a large bowl combine 1/2 cup warm water and molasses. Add yeast. Stir for 2 minutes; then set aside.
  2. In a small dish combine 1 cup warm water, honey, melted butter, and milk; pour into yeast mixture and let stand for 10 minutes.
  3. In a medium bowl stir together whole wheat flour, salt, and bulgur; fold into yeast mixture. Turn onto a floured work surface and knead until smooth and elastic, at least 20 minutes. Place the dough in a lightly oiled bowl. Cover with a towel and let rise in a warm place for about 1 hour, or until double in size. Punch down and knead again for 5 minutes. Divide the dough and place in oiled 9-inch loaf pans.
  4. Bake in 350°F (175°C) oven for 30 to 45 minutes, or until done. Cool before slicing.

Makes 2 loaves.
