Honey cornmeal muffins
with fresh chopped apple.

Muffins
- 3/4 cup all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup yellow cornmeal
1 large egg, beaten
1/2 cup honey
3 tablespoons vegetable shortening, melted
1/4 cup apple, chopped
- In a large bowl sift together
flour, baking powder, and salt; re-sift then add cornmeal and
set aside.
- In a small bowl beat egg;
add honey and melted shortening. Add all at once to the flour
mixture, stirring just enough to moisten. Fold in chopped baking
apple.
- Bake in 400°F (205°C)
oven for 20 minutes in greased muffin tins. Place on wire racks
to cool.
Makes 1 dozen muffins.
