Glory Raisin Muffins
- 2 cups all-purpose flour
1 cup yellow cornmeal
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon ground nutmeg
3/4 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups buttermilk
1/4 cup vegetable oil
3 large eggs
2 teaspoons grated orange peel
1 1/2 cups raisins
1 1/2 cups dried apricots
- In a large bowl, combine
flour, cornmeal, sugar, baking powder, nutmeg, baking soda, and
salt. Stir in buttermilk, oil, eggs, and grated orange peel.
Gently stir in raisins and dried apricots. Spoon batter into
the prepared muffin tins, filling each 2/3 full.
- Bake in 400°F (205°C)
oven for 18 minutes, or until the centers are set. Cool on wire
racks.
Makes 2 dozen muffins.
