Try these peanut butter
bran muffins for a delicious change up from the raisin bran muffin.
Peanut
Butter Bran Muffins
- 2 1/2 cups bran flakes
1 1/4 cups milk
1 cup all-purpose flour
1/2 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg
1/3 cup vegetable oil
1/3 cup creamy peanut butter
1/2 cup pecans, chopped
- Combine bran flakes and
milk in a bowl; let stand for 3 minutes.
- In a large bowl, combine
flour, brown sugar, baking powder, and salt. Blend in egg, oil,
creamy peanut butter, and bran mixture; stir until completely
mixed. Fold in chopped pecans. Spoon into greased muffin tins.
- Bake in a 400°F (205°C)
for 20 minutes. Cool on a wire rack. Remove from muffin cups.
Makes 1 dozen muffins.
