Early in the morning, the wafting aroma of these nutty cinnamon muffins baking in the oven will surely get 'em up and outta bed fast!

Pecan Cinnamon Muffins

1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 to 2 teaspoons ground cinnamon
3/4 cup milk
1 large egg
1/3 cup vegetable oil
1/2 cup chopped pecans
  1. Sift together flour, sugar, brown sugar, baking powder, salt, and cinnamon. Set aside.
  2. Combine milk, egg and oil in small bowl; mixing well. Add egg mixture at once to dry ingredients; stirring only until dry ingredients are moistened. Stir in chopped pecans. Spoon the batter into prepared muffin cups, filling each cup to two-thirds full.
  3. Bake in a 375°F (190°C) oven for 20 minutes, or until golden brown. Remove from oven. Cool on wire rack.

Makes 1 dozen muffins.
