Sugar-topped, cinnamon-scented and honey-sweetened muffins bursting with fresh blueberries.

Spiced Blueberry Muffins

1 1/3 cups all-purpose flour
2/3 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup fresh or frozen blueberries
1 large egg
2/3 cup milk
1/2 cup honey
3 tablespoons vegetable oil
1 teaspoon granulated sugar
  1. Preheat oven to 425°F (220°C). Grease a muffin tin.
  2. Combine flour, cornmeal, baking powder, cinnamon, and salt in a medium bowl. Add blueberries and toss to coat with the flour mixture.
  3. In a small bowl, beat egg. Add milk, honey and oil. Add the liquid mixture to the dry ingredients and stir until just mixed. Do not overmix.
  4. Fill each muffin cup about 2/3 full. Sprinkle the tops with sugar.
  5. Bake about 20 minutes, or until golden brown. Cool on a wire rack.

Makes 1 dozen muffins.
