This delicious, streusel-topped apple oven pancake is a breakfast treat your family will ask for again and again.

Baked Apple Streusel Pancake

Streusel:
1/2 cup quick or old fashioned oats
1/4 cup all-purpose flour
1/4 cup brown sugar, firmly packed
3 tablespoons butter, melted

Pancake:
1/4 cup butter
1/3 cup granulated sugar
1 teaspoon ground cinnamon
3 medium tart apples (about 1 1/4 pounds), cored and cut into thin wedges
1 cup all-purpose flour
1/2 cup quick or old fashioned oats
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 large egg, lightly beaten
  1. For Streusel: In a small bowl, combine oats, flour, brown sugar and melted butter, stirring until crumbly. Set aside.
  2. Heat oven to 350°F (175°C).
  3. For Pancake: Place butter in an 8-inch square glass baking dish.
  4. Bake 3 to 5 minutes or until butter is melted. Remove from oven.
  5. Stir in sugar and cinnamon. Add apples; stir to coat apples.
  6. Bake 10 to 15 minutes or until apples have softened, stirring occasionally.
  7. Meanwhile, in a large bowl, combine flour, oats, baking powder and salt; mix well.
  8. In a small bowl, combine milk and egg; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not over mix.) Spoon over apple mixture in baking dish, spreading batter to sides of dish. Sprinkle reserved streusel evenly over batter.
  9. Bake 25 to 30 minutes or until a wooden pick inserted in center comes out fairly clean. Serve warm.

Makes 8 servings.
