Serve this old fashion baked oatmeal with golden raisins and walnuts, topped with a dollop of vanilla yogurt or lightly sweetened whipped cream.

Breakfast Porridge

3 cups water
1 1/2 teaspoons salt
2 cups old fashioned oatmeal
2 large eggs
1 cup milk
1/4 cup dark molasses
3 tablespoons maple syrup
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 tablespoon ground ginger
1/4 pound golden raisins
1/4 cup chopped walnuts
Lightly sweetened whipped cream or vanilla yogurt for accompaniment
  1. Heat water and salt until boiling. Add oatmeal and cook for 5 minutes. Cool.
  2. Combine next 10 ingredients and add to oatmeal. Pour into a greased 9-inch square baking pan and bake, uncovered, in preheated 350°F (175°C) oven for 2 hours.
  3. Serve warm topped with a dollop of vanilla yogurt or lightly sweetened whipped cream.

Makes 6 servings.
