A brioche is a light French yeast bread rich with butter and eggs. Good rich dinner rolls can be used instead.

Cheesy Ham Filled Brioche

1 1/2 cups fully-cooked ham, cubed
2 tablespoons butter
1/4 fresh green bell pepper, chopped
1/4 cup fresh mushrooms, sliced
1 tablespoon all-purpose flour
1/4 teaspoon dry mustard
1/8 teaspoon freshly ground pepper
1 1/4 cups milk
1 cup shredded cheddar cheese
4 Brioche or rich dinner rolls
  1. In a medium skillet melt butter, add green pepper and saute 3 minutes. Add mushrooms and cook over medium heat till tender. Remove mushrooms and green pepper, reserving drippings in skillet.
  2. Add flour, dry mustard, and pepper to pan drippings, stirring until smooth. Slowly stir in milk; cook over medium heat until thickened and bubbly, stirring constantly. Reduce heat to low and add cheese, stirring until smooth. Gently stir in ham, mushrooms and green pepper; heat through.
  3. Cut tops from brioche. Spoon ham mixture over brioche; replace tops.

Makes 4 servings.
