These cottage cheese pancakes are great
served with butter and maple syrup, or topped with fresh fruit
or preserves and powdered sugar.
Cottage Cheese Pancakes
- 1 cup cottage cheese
6 large eggs
6 tablespoons all-purpose flour
6 tablespoons vegetable oil
- 1 teaspoon salt
- Place all ingredients in the container
of a blender and process until smooth.
- Heat griddle or skillet over medium heat
or to 375°F (190°C). Grease griddle with shortening. Griddle is
ready when a few drops of water bubble and skitter rapidly around.
- For each pancake, pour scant 1/4 cup batter
onto hot griddle. Cook pancakes until puffed and dry around edges.
Turn and cook other sides until golden brown.
Makes 4 servings.
