Easily enrich and add texture
to 'pancake mix' pancakes by adding cooked rice. A great use
for leftover rice.

Rice Pancakes
- 2 cups complete pancake
mix
1 1/2 cups cooked brown or white rice
Syrup and butter (optional)
- Beat pancake mix with
1 1/2 cups water in large bowl only until smooth. Stir in rice.
- Pour batter onto hot greased
griddle, using about 1/4 cup for each pancake. Cook until bubbles
form on top and underside is nicely browned. Turn and brown other
side. Turn ONLY once.
- Serve with butter and
syrup, if desired.
Makes about 12 (4-inch)
pancakes.
