
Frittatas do more than
double-duty, they can be served as breakfast, brunch, dinner...or
even as appetizers when cut into smaller wedges.
Festive
Cheddar Frittata
- 6 large eggs
1 cup fresh spinach, cut into strips
2 green onions, thinly sliced
1 tablespoon unsalted Wisconsin butter
1/4 cup fresh red bell pepper, diced
2 ounces (1/2 cup) Wisconsin Cheddar cheese, shredded
Salt and pepper to taste
- Set oven to broil.
- Beat eggs in a medium
bowl. Add spinach, green onion, and salt and pepper to taste.
- Melt butter over low heat
in a oven-proof skillet. Increase heat to medium-high and pour
egg and mixture into skillet to taste. Stir gently. When the
egg mixture is half set, top the surface of it with cheddar cheese
and bell peppers.
- Place the skillet under
the broiler and heat until cheese melts and the egg mixture is
cooked.
- Serve immediately.
