Festive Cheddar Frittata.

Frittatas do more than double-duty, they can be served as breakfast, brunch, dinner...or even as appetizers when cut into smaller wedges.

Festive Cheddar Frittata

6 large eggs
1 cup fresh spinach, cut into strips
2 green onions, thinly sliced
1 tablespoon unsalted Wisconsin butter
1/4 cup fresh red bell pepper, diced
2 ounces (1/2 cup) Wisconsin Cheddar cheese, shredded
Salt and pepper to taste
  1. Set oven to broil.
  2. Beat eggs in a medium bowl. Add spinach, green onion, and salt and pepper to taste.
  3. Melt butter over low heat in a oven-proof skillet. Increase heat to medium-high and pour egg and mixture into skillet to taste. Stir gently. When the egg mixture is half set, top the surface of it with cheddar cheese and bell peppers.
  4. Place the skillet under the broiler and heat until cheese melts and the egg mixture is cooked.
  5. Serve immediately.

Makes 4 servings.
