A south-of-the-border-style
quiche with ground beef, mild green chiles and Monterey Jack
cheese.

Chile Quiche
- 1/2 pound ground beef
1/4 cup onion, chopped
1 (4-ounce) can diced green chili peppers
1 cup shredded Monterey Jack cheese
3 large eggs
1 cup milk
1/2 teaspoon salt
1/8 teaspoon garlic powder
1 (9-inch) unbaked pie shell
- Prick the bottom and sides
of a 9-inch unbaked pie shell with a fork; bake at 375°F
(190°C) for 10 minutes. Cool on a wire rack.
- In a skillet over medium
heat, cook ground beef and chopped onion until the beef is browned,
stirring to crumble; drain. Spoon the beef mixture into the cooked
pie shell then top with diced green chili peppers and shredded
Monterey Jack cheese.
- In a medium bowl combine
eggs, milk, salt, and garlic powder; mix well. Pour into the
pie shell.
- Bake at 375°F (190°C)
for 35 minutes, or until the center is set.
