A tasty ham and cheese cheese breakfast pie baked stove-top in a skillet.

Ham and Cheddar Skillet Pie

1/2 cup biscuit baking mix
1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
6 large eggs
1 cup chopped ham
1/4 cup chopped green bell pepper
2 tablespoons sliced green onions
2 tablespoons butter
1 cup (4-ounces) shredded cheddar cheese
  1. Mix biscuit baking mix, milk, salt, pepper, and eggs in a bowl. Stir in chopped ham, chopped green bell pepper, and sliced green onions.
  2. Heat butter in a skillet until melted and bubbly. Gradually pour the egg/ham mixture into the skillet. Cover and cook over medium-low heat until almost set, about 10 to 12 minutes. Sprinkle with shredded cheddar cheese; cover and cook until the cheese is melted, about 3 minutes longer.

Makes 6 servings.
