Impress your family when you serve this golden, puffy and elegant egg souffle with chopped ham for brunch or supper.

Ham Souffle

4 tablespoons butter, softened
4 tablespoons all-purpose flour
6 large eggs, separated
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon onion salt
1 cup chopped ham
1 cup milk
  1. Combine softened butter, flour, egg yolks, salt, dry mustard, onion salt, finely chopped ham, and milk. Blend with a mixer or blender until well mixed. Pour into a saucepan and cook until thick, stirring constantly. Remove from the heat.
  2. In another bowl, beat 6 egg whites until stiff. Pour in the cooled egg yolk mixture, folding gently into the egg whites.
  3. Spoon into a baking dish and bake at 375°F (190°C) for 30 minutes. Serve immediately.

Makes 5 servings.
