Sauteed, cinnamon-flavored apples are cooked in the center of these tender pancakes.

Sweet Apple Pancakes

2/3 cup all-purpose flour
2 teaspoons granulated sugar
1/4 teaspoon salt
4 large eggs
1/2 cup milk
2 cups sliced apples
1/4 cup butter
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
Butter for accompaniment
Maple syrup for accompaniment
  1. Sift together flour, 2 teaspoons sugar, and salt in a small bowl. Beat eggs and milk together in a medium bowl. Gradually add flour mixture to egg mixture and beat until smooth; set aside.
  2. Sauté apples in 1/4 cup butter until tender. Mix 2 tablespoons sugar and cinnamon together; stir into apples. Set aside.
  3. Melt 2 tablespoons butter in a small skillet. Pour in batter to a depth of about 1/4-inch. When set, place one-fourth of the apples on top then cover with more batter. Fry pancake until lightly browned on both sides. Repeat until all the batter and apples are used.
  4. Serve with butter and maple syrup.

Makes 4 servings.
