Buttermilk contributes
to the tenderness and a delightful tangy taste in this rich,
buttery pound cake.
Buttermilk
Pound Cake
- 1 cup butter
2 cups granulated sugar
4 large eggs
2 tablespoons lemon juice
1 teaspoon vanilla extract
3 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup buttermilk
- Preheat oven to 375°F
(190°C). Grease and flour a loaf pan.
- Cream butter and sugar
together until fluffy. Add eggs, one at a time. Add lemon juice
and vanilla; blend well.
- Sift together flour, salt,
baking soda and baking powder. Add the dry mixture to the creamed
mixture alternately with buttermilk. Beat well after each addition.
- Pour into prepared pan;
bake 20 to 25 minutes, or until the center is set. Cool on a
wire rack for 10 minutes before removing from pan.
Makes 12 servings.
