This yummy chocolate glaze, made with cocoa, is the quickest and easiest way to ice cakes, cupcakes, cream puffs, etc.

Cocoa Glaze

2 tablespoons butter
1/4 cup unsweetened cocoa powder
3 tablespoons water
1/2 teaspoon vanilla extract
1 1/4 cups powdered sugar
  1. In small saucepan over low heat, melt butter. Stir in cocoa and water. Cook, stirring constantly, until mixture thickens. Do not boil. Remove from heat.
  2. Stir in vanilla. Gradually add powdered sugar, beating with whisk until smooth. Add additional water, 1/2 teaspoon at a time, until desired consistency.
  3. Spread glaze over top of cake, allowing glaze to drizzle down sides.

Makes about 1 1/2 cups glaze.
