This versatile fluffy, cream cheese frosting, flecked with sweet-tart dried cranberries is an ideal frosting for carrot cake, any plain cakes such as yellow or white...even a spice or chocolate cakes would pair nicely.

Cream Cheese Cranberry Frosting

1 (8-ounce) package cream cheese
3 tablespoons butter
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1/2 cup dried cranberries
  1. In mixing bowl, beat together cream cheese and butter until creamy. Gradually add powdered sugar, mixing until smooth. Add vanilla and cranberries and mix well.

Frosts and fills an 8 or 9-inch layer cake or 1 (13 x 9-inch) cake.
