This versatile fluffy, cream cheese frosting,
flecked with sweet-tart dried cranberries is an ideal frosting
for carrot cake, any plain cakes such as yellow or white...even
a spice or chocolate cakes would pair nicely.
Cream Cheese Cranberry
Frosting
- 1 (8-ounce) package cream cheese
3 tablespoons butter
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1/2 cup dried cranberries
- In mixing bowl, beat together cream cheese
and butter until creamy. Gradually add powdered sugar, mixing
until smooth. Add vanilla and cranberries and mix well.
Frosts and fills an 8 or
9-inch layer cake or 1 (13 x 9-inch) cake.
