A southern favorite, buttery
pecan pralines.
Butter
Pecan Pralines
- 2 cups granulated sugar
1 teaspoon baking soda
1/8 teaspoon salt
3/4 cup butter
1 cup buttermilk
1 teaspoon vanilla extract
2 cups pecans
Wax paper
- In a large saucepan, combine
sugar, baking soda, salt, butter, and buttermilk. Bring to a
boil, stirring constantly. Reduce the heat to medium-low and
continue cooking until the mixture becomes caramel-colored and
reaches the soft ball stage (238°F / 115°C).
- Remove from the heat,
add vanilla and pecans. Beat until thick enough to drop from
a spoon onto wax paper. If the mixture becomes too hard, heat
and add a small amount of water; stir until smooth.
Makes 36 pieces.
