Milky caramels with the taste of honey are a special treat. Filled with nuts and scented with vanilla, they tempt the tastebuds in a most delicious way.

Honey Caramels

2 cups honey
1 cup evaporated milk
1 cup chopped nuts
3 tablespoons butter
1 teaspoon vanilla extract
1/8 teaspoon salt
  1. Butter an 8 x 8 x 2-inch pan; set aside.
  2. Mix honey and evaporated milk in a heavy saucepan; cook over medium heat to the firm-ball stage (see note).
  3. Remove from heat and stir in nuts, butter, vanilla and salt. Pour into prepared pan. Let cool before cutting into squares.

Makes 64 (1-inch) squares.

Note: 'Firm-ball' describes the point at which a drop of boiling syrup immersed in cold water, when removed, forms a firm ball that can be flattened a little. On a candy thermometer, the firm-ball stage is between 242° and 248°F.
