Blueberry Pancake
Cookies
- 1/4 cup butter, softened
2/3 cup granulated sugar
1 large egg
1 1/2 cups pancake mix
1/2 cup chopped pecans
1 cup fresh or frozen blueberries
- Cream butter and sugar together in large
mixing bowl. Beat in egg, mixing well. Stir in pancake mix and
pecans. Fold in blueberries.
- Drop by spoonfuls onto cookie sheets and
bake for 12 minutes at 350°F
(175°C). Cool on wire racks.
Makes about 2 dozen cookies.
