Orange-flavored cookies studded with white chocolate chips and frosted with an orange glaze.

Creamsickle Cookies

3 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
3 tablespoons orange powdered breakfast drink mix (such as Tang)
3/4 cup vegetable shortening
1 1/2 cups firmly packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 cup buttermilk
1 cup white chocolate chips
 
Orange Glaze:
1 teaspoon butter, melted
3 tablespoons orange powdered breakfast drink mix
1 cup powdered sugar
1 to 2 tablespoons water
  1. Preheat oven to 375°F (190°C). Lightly grease baking sheets.
  2. In medium bowl, combine flour, salt, baking powder and 3 tablespoon drink mix; set aside.
  3. Cream the shortening and the sugar together until light and fluffy. Add the eggs and vanilla, mixing well. Dissolve the baking soda in the buttermilk and add to creamed mixture, mixing well. Stir in flour mixture until just mixed; add white white chocolate chips.
  4. Drop dough by tablespoonfuls onto prepared baking sheets. Bake for 10 to 12 minutes. Transfer to wire racks and frost cookies while still hot with Orange Glaze.
  5. To make glaze, combine the butter, 3 tablespoons drink mix, powdered sugar plus enough water to obtain desired spreading consistency.

Makes 4 dozen.
