Honey-sweetened, low-fat apricot dessert
garnished with chopped pecans.
Apricot Whip
- 1 1/2 cups dried apricots
- Boiling
water
1 1/2 cups plain low-fat yogurt
2 tablespoons honey
2 tablespoons finely chopped pecans
- Pour boiling water over apricots and soak
for about a half hour.
- Drain and combine the apricots with the
other ingredients in a food processor. Process until a smooth
consistency is reached.
- Chill and serve with pecans sprinkled
over each serving.
Makes 6 (1/2 cup) servings.
