A delightfully sweet-tart
dessert that's cool and refreshing!
Cranberry-Citrus
Shiver
- 1 (12-ounce) package fresh
or frozen cranberries
- 2 cups water
- 1 3/4 cups granulated
sugar
- 1 cup orange juice
- 1/4 cup lemon juice
- 1 teaspoon grated orange
peel
- In a saucepan, bring cranberries
and water to a boil. Reduce heat; simmer for 5 minutes. Press through a strainer to remove skins;
discard skins.
- To the juice, add sugar,
orange juice, lemon juice and orange peel; stir until the
sugar has dissolved. Pour
into an 8-inch square pan. Cover and freeze until ice
begins to form around the
edges of the pan, about 1 to 1 1/2 hours and stir.
- Freeze until mushy, about 30 minutes. Spoon into a freezer
container; cover and freeze.
- Remove from the freezer
20 minutes before serving. Scoop into dessert dishes and serve.
Makes 6 servings.
