A tasty meatloaf with traditional Asian flavors such as soy sauce and fresh gingerroot.

Asian Meatloaf

1 1/2 pounds lean ground beef
1 large egg
1 cup soft bread crumbs
2 tablespoons chopped fresh parsley
2 tablespoons dried onion flakes
2 tablespoons firmly packed brown sugar - divided use
2 tablespoons soy sauce - divided use
1 teaspoon grated fresh gingerroot
1 tablespoon honey
  1. Combine ground beef, egg, bread crumbs, parsley, onion flakes, half of the brown sugar, half of the soy sauce, and ginger; mix well. Press into a microwave-safe loaf pan and microwave on HIGH for 12 minutes, turning once.
  2. Meanwhile, combine honey, remaining brown sugar, and remaining soy sauce. Invert meatloaf onto a microwave-safe serving plate and pour honey sauce on top. Microwave on HIGH for 2 more minutes.
  3. Serve with hot rice, if desired.

Makes 6 servings.
