Crunchy chow mein noodles
combined with Asian seasonings, cream of chicken soup, ground
beef and vegetables makes some really tasty chow.

Mein Casserole
- 1 pound ground beef
3/4 cup chopped celery
3/4 cup chopped onion
1 1/4 cups water, boiling
1/2 cup rice
1/2 teaspoon salt
1 (10.5-ounce) can cream of chicken soup
2/3 cup sliced mushrooms
1 tablespoon packed brown sugar
2 teaspoons soy sauce
1 teaspoon butter or margarine
1 1/2 cups chow mein noodles
- In a skillet brown ground
beef. Add celery and onion. Cook until brown. Drain.
- In a greased 9-inch baking
dish, pour boiling water on rice, stirring in salt. Stir in the
ground beef mixture, cream of chicken soup, sliced mushrooms,
brown sugar, soy sauce and butter.
- Cover and bake at 350°F
(175°C) for 30 minutes; stirring occasionally.
- Bake, uncovered, for 30
additional minutes. Just before serving, stir in chow mein noodles.
Makes 8 servings.
