Easy Pizza Casserole

1 pound bulk Italian sausage, or if using links, casings removed
3 tablespoons olive or vegetable oil - divided use
1 (16-ounce) package hot roll mix
1 (14-ounce) jar pizza or marinara sauce
1 (2-ounce) can sliced black olives, drained
1 (4-ounce) can sliced mushrooms, drained
3 cups shredded mozzarella cheese - divided use
  1. Preheat oven to 425°F (220°C). Grease a 13 x 9 x 2-inch baking dish; set aside.
  2. In large skillet, heat 2 tablespoons oil over medium-high heat and cook sausage, using spoon to crumble, until done. Remove sausage and drain on paper towels. Set aside.
  3. Prepare hot roll mix as directed on package using 1 cup hot water and omitting the egg. No need to let dough rise. Pat dough evenly onto the bottom and sides of the prepared baking dish.
  4. Brush dough with the remaining 1 tablespoon oil; sprinkle 1 1/2 cups cheese over dough. Spoon pizza sauce evenly over cheese, layer the cooked sausage, olives and mushrooms over sauce; sprinkle remaining 1 1/2 cups cheese evenly over all.
  5. Bake for 30 minutes or until topping is bubbly and crust has browned.

Makes 8 servings.
