Meatballs in a creamy chile
cheese sauce made with processed cheese.
Meatballs
con Queso
- 1 1/2 pounds ground beef
1 1/2 cups soft bread crumbs
1/3 cup chopped onion
1/3 cup milk
3 tablespoons chopped parsley
1/4 teaspoon pepper
1 large egg
3 tablespoons vegetable oil
4 ounces chopped green chile peppers
4 cups (16 ounces) shredded processed cheese (such as Velveeta)
1 (1 1/4-ounce) package taco seasoning mix
3/4 cup water
- Combine ground beef, soft
bread crumbs, chopped onion, milk, chopped parsley, pepper, and
beaten egg. Shape into 1-inch balls.
- In a skillet, brown the
meatballs in oil. Stir in chopped green chile peppers, shredded
processed cheese spread, taco seasoning mix, and water. Cook
over low heat until the cheese melts, stirring constantly.
Makes 6 servings.
