No frills, just a great basic blueberry pie...oft times the simple things in life are best. Serve topped with a dollop of sweetened whipped cream.

Basic Blueberry Pie

4 cups blueberries, fresh or frozen
1 cup granulated sugar
1/4 cup lemon juice
1/3 cup cornstarch
1/4 cup water
1 (9-inch) unbaked pie crust
  1. Preheat oven to 400°F (205°C).
  2. In a heavy saucepan over medium heat, mix together blueberries, sugar and lemon juice. Bring to a boil, stirring frequently.
  3. Mix cornstarch with water to make a paste. Pour into berry mixture, stirring constantly until thick. Remove from heat and let cool.
  4. Pour berry mixture into unbaked pie shell. Bake for about 35 minutes or until the crust is golden.

Makes 8 servings.
