Cream cheese contributes
flavor and a creamier texture to a southern favorite, sweet potato
pie.

Sweet Potato Pie
- 2 large eggs
2 teaspoons ground allspice
3/4 cup butter, melted
2 (3-ounce) packages cream cheese, softened
2 cups granulated sugar
1 teaspoon vanilla extract
1 tablespoon cornstarch
1/4 cup cold water
1 1/2 cups mashed sweet potatoes or yams
1 cup chopped nuts
- In a bowl mix eggs, allspice,
melted butter, softened cream cheese, sugar, and vanilla.
- In another bowl, mix together
cornstarch and cold water. Stir cornstarch mixture into the cheese
mixture.
- To cheese mixture add
1 1/2 cups mashed sweet potatoes and 1 cup chopped nuts; mix
well. Pour into unbaked pie shell.
- Bake at 425°F (220°C)
for 10 minutes, reduce the heat to 325°F (160°C), and
bake for 35 to 45 minutes longer.
