Pastry recipe for fried pies.

Fried Pie Crust

1 cup vegetable shortening
3 cups all-purpose flour
1/8 teaspoon salt
1 teaspoon baking soda
1 cup buttermilk
  1. In a mixing bowl, combine shortening, flour, salt, and baking soda. Mix in buttermilk.
  2. On a lightly foured surface, roll out dough to a thickness of 1/8-inch. Cut dough into 2 1/2-inch rounds or squares. Using a canape filling of your choice, place a teaspoon in the center of each round. Fold the dough over into crescents being sure to seal the pastries very firmly so that none of the filling escapes.
  3. Heat fat in a deep fryer to 365°F (185°C). Fry until crust is golden brown.

Makes 8 to 10 servings.
