Mini Libby's Famous Pumpkin Pies.

This Thanksgiving bring the kids into the kitchen. Together you can make these easy mini pumpkin pies which are perfectly scaled down to kid size!

Mini LIBBY'S® Famous Pumpkin Pies

4 (4-inch) mini-pie shells (1-cup volume)
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 (15-ounce) can LIBBY'S® 100% Pure Pumpkin
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Milk
  1. Preheat oven to 425°F (220°C).
  2. Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into shells.
  3. Bake for 15 minutes. Reduce oven temperature to 350°F (175°C); bake for 30 to 35 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this may cause filling to separate from the crust.)

Makes 4 mini pies.

For Lower Fat/Calorie Pies, substitute NESTLÉ® CARNATION® Lowfat Evaporated or Fat Free Evaporated Milk.

Note: If using metal or foil pans, bake on preheated heavy-duty baking sheet.
