Old fashioned coconut custard
pie, just like the one grandma baked.

Coconut Pie
- 1 cup granulated sugar
4 tablespoons cornstarch
3 large egg yolks
2 cups milk
1 cup sweetened flake coconut
1/4 cup butter, softened
1 teaspoon vanilla extract
1 (9-inch) unbaked pie crust
- Preheat oven to 325°F
(160°C).
- Combine sugar and cornstarch
in a small bowl.
- In a large mixing bowl,
beat egg yolks until light. Add sugar mixture.
- Stir in milk, coconut,
butter and vanilla; mix well. Pour into unbaked pie crust and
bake for 1 hour or until the center is set.
Makes 8 servings.
