Fresh strawberry pie, one of the delights of spring. A simple glaze made with fresh strawberries is generously drizzled over fresh strawberries piled high on a layer of cream cheese in a pastry crust.

Simple Strawberry Glace Pie

6 cups strawberries
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1/8 teaspoon red food coloring
1 (3-ounce) package cream cheese, softened
1 (9-inch) baked pie shell
  1. Mash enough strawberries to make 1 cup, set remaining strawberries aside.
  2. In a saucepan, combine sugar, cornstarch, water, red food coloring, and the reserved mashed strawberries. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Cook for 1 minute. Cool slightly.
  3. Beat softened cream cheese until smooth. Spread into baked pie shell. Fill the shell with the remaining strawberries. Pour the cooked strawberry mixture on top. Refrigerate for 3 hours, or until set.

Makes 8 servings.
