This yummy ice cream pie is topped with spectacular homemade caramel and pecan topping.

Spectacular Ice Cream Pie

1 cup graham cracker crumbs
1/2 finely chopped cup pecans
4 tablespoons butter, melted
2 pints vanilla ice cream
3 tablespoons butter
1 cup firmly packed brown sugar
1/2 cup half-and-half
1 teaspoon vanilla extract
1 cup chopped pecans
  1. Preheat oven to 375°F (190°C).
  2. Combine 1 cup graham cracker crumbs, 1/2 cup chopped pecans, and 4 tablespoons melted butter. Press into the bottom of a 9-inch pie plate and bake for 8 to 10 minutes. Cool.
  3. Combine 2 pints ice cream (try using toffee, coffee, vanilla, or praline) and spoon into the cooled crust.
  4. Melt 3 tablespoons butter in a saucepan and stir in brown sugar. Cook for 5 to 6 minutes, stirring constantly. Remove from the heat and stir in 1/2 cup half-and-half; cook 1 minute more.
  5. Add 1 teaspoon vanilla and 1 cup chopped pecans; pour over the ice cream. Freeze. Keep frozen until served.

Makes 8 servings.
