Blueberries are a superfood, and this super
delicious fresh blueberry pie is sure to become a spring and
summertime family favorite.
Very Blueberry Pie
- 1 (10-inch) baked pie shell
- 4 tablespoons butter
- 5 tablespoons all-purpose flour
- 3/4 cup water
- 1 cup granulated sugar
4 cups fresh or frozen blueberries
- Lightly sweetened whipped cream or vanilla
ice cream for accompaniment
- In a saucepan, melt butter over medium
heat. Stir in flour and cook for 1 minute, stirring constantly.
Add the water and sugar and 1 cup of the blueberries. Bring mixture
to a boil and cook over medium heat until mixture thickens, stirring
frequently. Remove mixture from heat and cool.
- Stir in remaining 3 cups blueberries into
cooled mixture and pour into baked pie shell. Refrigerate until
ready to serve. Serve accompanied with a dollop of lightly sweetened
whipped cream or a scoop of vanilla ice cream, if desired.
Makes one 10-inch pie.
