Chipotle Jack Spicy Chicken Pizza

6 tablespoons pizza sauce
1 (12-inch) pizza crust, unbaked
1 cup (4 ounces) shredded chipotle Jack cheese
3/4 cup (3 ounces) shredded fontina cheese
1/4 cup (1 ounce) shredded smoked Gouda cheese
4 ounces cooked chicken, cut 1/4-inch thick
1 ounce mushrooms, sliced 1/3-inch thick
1 ounce bell peppers, roasted, julienned
  1. Preheat the oven to 450°F (230°C).
  2. Place the pizza crust on a pizza pan or a large baking sheet. Spread the pizza sauce on the crust. Blend the shredded cheeses together in bowl; place all but 1/2 cup on the pizza. Arrange the prepared chicken, peppers, and mushrooms on top.
  3. Bake 9 to 11 minutes. Remove from the oven and sprinkle the pizza with the remaining 1/2 cup of cheese.

Makes 4 servings.
