A basic recipe for a large cut bone-in leg of pork (fresh ham). Serve with a chutney or glaze at the table.

Basic Bone-In Leg of Pork

1 whole, bone-in leg of pork (fresh ham), about 15 to 20 pounds
  1. Heat oven to 350°F (175°C)
  2. Place pork on a rack in large shallow roasting pan. Roast for 3 1/2 hours to five hours or until meat thermometer inserted in thickest part reads 150°F (65°C). (About 15 to 20 minutes per pound.)
  3. Remove from oven, cover with foil and let rest for 20 minutes.

Makes 10 to 13 servings.
