With a sassy seasoning
rub, this simple pork roast makes supper a bit special. Add hot
cornbread, steamed broccoli and creamy coleslaw to complete the
menu. Plan for some leftover roast for sandwiches tomorrow.
Cajun
Garlic Pork Roast
- 1 (3-pound) boneless pork
loin roast
1 teaspoon seasoned salt
1 tablespoon oregano leaves
1 tablespoon ground black pepper
1 garlic clove, crushed
1/2 teaspoon red pepper flakes
1 teaspoon chili powder
1 teaspoon ground cumin
- Heat oven to 350°F
(175°C)
- In small bowl, blend together
well-seasoned salt, oregano, pepper, garlic, red pepper, chili
powder and cumin. Rub seasoning on all surfaces of pork roast.
Place pork in shallow roasting pan and roast until meat thermometer
inserted reads 150°F to 155°F (approximately 65°C),
about 1 to 1 1/2 hours.
- Remove pork from oven;
let rest 10 minutes before slicing.
Serves 6 with leftovers.
